Everyone loves soup, right? Many years ago, I would host Thanksgiving. It was my favorite tradition; and everyone was invited. I loved this annual feast and treasured the days of cooking that lead up to it.
As you all know, the Sicilian in me went into gear, and I always ended up cooking too much. However, out of all foods, my pride and glory was always my soups.
At an Italian Thanksgiving, there are many courses, soup being the first one. I always made 2 from which my guests could choose. One was mini meatball minestrone, and the other was sweet potato vegetable soup. Both were a hit.
The warm, comforting meal is a huge part of eating in this family, It is the go to dinner. The recipes here are tried and true. I have of course included my version of the old-fashioned chicken soup, the one that cures the common cold, according to my Auntie Natalie.
A very hearty minestrone soup with lots of veggies and small meatballs. It is a meal in itself.
- 2 olive oil (enough to coat the bottom of the pan) (extra virgin olive oil (EVOO))
- 2 stalks celery cut into bite sized pieces
- 1 green onion cut into small slices
- clove garlic minced
- 4 sprits fresh parsley chopped
- 2 basil leaves chopped
- 4 zucchini peeled and sliced
- 1/2 head cabbage cored and shredded
- 1 28 oz. canned tomatoes (diced or whole) ( very well drained)
- 1 32 oz organic chicken broth
- 2 cups water
- 1 lb. ground beef (I use 90% fat free)
- 1 egg
- 1/4 cup bread crumbs (Italian style)
- 1/4 cup parmesan cheese (Romano works too)
- 2 sprigs fresh parsley (chopped)
- In a large soup pot, sauté celery, onions, garlic, parsley, and basil until onions are translucent.
- Add zucchini, tomatoes, cabbage, chicken broth and water. Stir on low to medium heat. Simmer.
- Prepare the meatballs and place them in the soup as it is simmering.
- Lower heat to medium low and simmer for about an hour. Keep checking and stirring.

Remember, sometimes the best soup is the “kitchen sink” soup. That simply means that anything in the fridge or cabinet you want to rid yourself of goes into a soup, Cabbage, spinach, beans, celery, onion, tomatoes, and any leftover meat, for example, chicken. Now you won’t feel guilty about food going bad. It works.
