Mini Broccoli Frittata

Small broccoli frittata
Prep Time 10 minutes
Cook Time 20 minutes
Servings 6

Ingredients

  • 8 eggs
  • cup milk
  • 3 sprigs fresh parsley
  • ¼ cup shredded cheddar/mozzarella mix
  • 1 ½½ cup broccoli florets chopped

Instructions

  • Preheat oven to 400° F
  • Spray muffin tin with Olive Oil Pam.
  • Mix all ingredients into a large Pyrex measuring cup and whisk together well.
  • Add salt and pepper to taste.
  • Bake for 20 minutes or until tops are slightly brown and a knife comes out clean.
