Mini Broccoli Frittata
Small broccoli frittata
- 8 eggs
- ⅓ cup milk
- 3 sprigs fresh parsley
- ¼ cup shredded cheddar/mozzarella mix
- 1 ½½ cup broccoli florets chopped
- Preheat oven to 400° F
- Spray muffin tin with Olive Oil Pam.
- Mix all ingredients into a large Pyrex measuring cup and whisk together well.
- Add salt and pepper to taste.
- Bake for 20 minutes or until tops are slightly brown and a knife comes out clean.
